Why does Moff Gideon want Baby Yoda?
Why is Gideon so set on capturing the Child? Well, Baby Yoda is obviously special and rare, and if one were to harness his Force-sensitive powers for their own ends, they could become near unbeatable. It also appears that Gideon knows more about the Child than Mando or any of us do.

Gideon appears to be extremely smart, relentless, experienced and cunning, and it doesn’t hurt that he’s backed up by a small army, E-Web Heavy Repeating Blaster Cannons and his Outland TIE-Fighter. He also seems to have a sixth sense regarding the tactics of his opponents, and his promise of order, merciless as it might be, may offer an attractive alternative to people exhausted by the post-war societal breakdown along the Outer Rim.
There is also the possibility that Gideon is working for Darth Sideous or Snoke (more on that later). No matter what, Gideon is an opponent who will give Mando a run for his money.
